Recipe: Italian summer salad

So, it’s still hot outside. Looking for something light but still filling with lots of textures and flavors? Toss this together tonight for a bright, hearty, tasty meal:

Salad Ingredients:

Dole Spring Lettuce Mix (or your favorite bag of salad)

1 pint cherry tomatoes, halved

8 oz cubed summer sausage or ham (optional)

½ cup sliced almonds

1 cup shredded mozzarella cheese

Dressing:

Juice of ½ lemon (2-3 tablespoons)

6 tablespoons olive oil

Italian spices (basil, garlic, oregano, etc.)

Salt and pepper to taste

Layer salad ingredients in a large bowl. Whisk dressing ingredients together in a small bowl. Pour dressing over salad and toss just before serving.

For dessert, have a scoop of your favorite ice cream or sorbet. My favorite is Haagen-Daaz’s creamy mango sorbet. Cheers!
